Fig, Caramelized Onion and Brie Turkey Burger

Serves 4:
4 Brioche Hamburger Buns
1 Pound of Ground Turkey
2 Eggs
1 Cup of Italian Breadcrumbs
1 Tablespoon of Montreal Chicken Seasoning
2-4 Tablespoons of Fig Jam or Spread
8 Ounces of Brie Cheese, rind removed and quartered into slices
8 Ounces of Arugula
1 Vidalia Onion, Thinly Sliced
Combine the ground turkey, eggs, bread crumbs, and Montreal chicken seasoning in a bowl. Form the mixture into 4, equally sized, patties.
Heat a skillet to medium, high heat with some olive oil. Add the onion and cook, stirring occasionally, until they are thoroughly browned and caramelized. Remove the onions and set aside on a paper towel lined plate.
Without wiping out the pan add some more olive oil, then the patties. Cover and cook until golden brown on both sides, adding the brie for a few minutes before it is cooked through. Remove from the skillet and cover with foil. Add the separated brioche buns to the pan to lightly toast. Once toasted spread the fig jam on the top bun. Assemble as follows: Bottom bun, patty with brie, onions, arugula, and top bun.
