Summer Pizza with Peaches, Prosciutto, Onion, Burrata and Honey Balsamic


1 Bunch of Fresh Basil, Thinly Sliced

1 Ripe Peach, Diced

1 Onion, Thinly Sliced

2 Tablespoons of Balsamic Glaze

2 Tablespoons of Honey

3 Tablespoons of Basil Pesto

1/2 Pound of Pizza Dough

8 Ounces of Prosciutto

6 Ounces of Shredded Mozzarella cheese

8 Ounces of Burrata cheese, Thinly Sliced

 

Preheat the oven to 450 degrees and grease your pizza pan with some olive oil. On a lightly floured surface, roll the dough out until until it is thin. Transfer the dough to the greased pizza pan.

Heat a skillet over medium heat with some olive oil. Add the peaches and onions, seasoning with salt and pepper. Cook, stirring frequently until the onion begins to brown and soften. Remove from heat.

Spread the dough with pesto and top with half the mozzarella cheese. Add the peaches, onions, and prosciutto, then top with the remaining mozzarella. Drizzle the pizza lightly with olive oil, season with salt and pepper.

Place in the oven and bake for 10-15 minutes or until the crust is golden and the cheese is melted. Remove from the oven and top with the burrata. Place the pizza back into the oven and remove again when the burrata is melted. Sprinkle on the basil and drizzle with the honey and balsamic glaze.
