Preheat oven to 425 Degrees and place the rack in the middle of the oven. Slice open the dates to allow room for the cheese. Stuff the desired amount of the Boursin into the pockets. Cut bacon strips in half and wrap one piece around each stuffed date. Secure the bacon in place with a toothpick. Arrange the dates on a rimmed baking sheet. Bake for 7-8 minutes. Turn over the dates and bake for an additional 7-8 minutes, until bacon is crispy. Remove from the oven and allow to cool before drizzling with balsamic glaze.
Leftover Tip: Chop dates into bite size pieces, fry bacon until crispy and crumble. Assemble a salad using spinach and toss in dates and bacon. Add in crumbled leftover Boursin if desired. Mix balsamic glaze with equal parts olive oil and red wine vinegar to taste. Dress the salad with the balsamic vinaigrette.
